Ingredients

  • Chayote (Chuchu) - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium heat.
  2. Wash the chayotes thoroughly and cut them in half lengthwise.
  3. In a small bowl, mix olive oil, garlic powder, smoked paprika, lemon juice, salt, and black pepper to create a marinade.
  4. Brush the cut sides of the chayote halves with the marinade, ensuring they are well coated.
  5. Place the chayote halves on the grill, cut side down, and grill for about 10-12 minutes until they are tender and have nice grill marks.
  6. Flip the chayote halves and grill for an additional 5-7 minutes.
  7. Remove from the grill and sprinkle chopped fresh parsley on top before serving.
