Ingredients
- Chayote squash - 2 medium (about 400g)
- Cream cheese - 100g
- Heavy cream - 100ml
- Parmesan cheese, grated - 50g
- Mozzarella cheese, shredded - 50g
- Olive oil - 1 tablespoon
- Garlic, minced - 1 clove
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Paprika - 1/4 teaspoon
- Fresh parsley, chopped - 1 tablespoon
Steps
- Preheat the oven to 200°C (390°F).
- Cut the chayote squash in half, remove the seed, and slice it into thin pieces.
- In a pot, bring salted water to a boil and add the chayote slices. Cook for 5-7 minutes until slightly tender, then drain and set aside.
- In a mixing bowl, combine the cream cheese, heavy cream, minced garlic, salt, black pepper, and paprika until smooth.
- Add the cooked chayote to the cream mixture and gently fold until well combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Top with grated Parmesan and shredded mozzarella cheese.
- Drizzle with olive oil and bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
- Remove from the oven, garnish with chopped parsley, and let it cool for a few minutes before serving.
