Ingredients

  • Chayote squash - 2 medium (about 400g)
  • Cream cheese - 100g
  • Heavy cream - 100ml
  • Parmesan cheese, grated - 50g
  • Mozzarella cheese, shredded - 50g
  • Olive oil - 1 tablespoon
  • Garlic, minced - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Paprika - 1/4 teaspoon
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the chayote squash in half, remove the seed, and slice it into thin pieces.
  3. In a pot, bring salted water to a boil and add the chayote slices. Cook for 5-7 minutes until slightly tender, then drain and set aside.
  4. In a mixing bowl, combine the cream cheese, heavy cream, minced garlic, salt, black pepper, and paprika until smooth.
  5. Add the cooked chayote to the cream mixture and gently fold until well combined.
  6. Transfer the mixture to a greased baking dish and spread it evenly.
  7. Top with grated Parmesan and shredded mozzarella cheese.
  8. Drizzle with olive oil and bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
  9. Remove from the oven, garnish with chopped parsley, and let it cool for a few minutes before serving.
