Ingredients

  • Pork shoulder - 300 grams
  • Pork fat - 100 grams
  • Smoked paprika - 1 tablespoon
  • Garlic cloves - 3, minced
  • Red wine vinegar - 2 tablespoons
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon
  • Natural hog casings - 1 meter

Steps

  1. In a large bowl, combine the pork shoulder and pork fat, then grind the mixture using a meat grinder fitted with a coarse plate.
  2. Add the smoked paprika, minced garlic, red wine vinegar, cumin, oregano, salt, black pepper, and cayenne pepper to the ground meat mixture and mix thoroughly until well combined.
  3. Soak the hog casings in water for about 30 minutes, then rinse them under cold water.
  4. Stuff the meat mixture into the soaked casings, being careful not to overstuff them, and tie them off into 15-20 cm links.
  5. Prick the sausages with a needle to release any air pockets.
  6. Preheat your grill to medium-high heat and cook the sausages for about 15-20 minutes, turning occasionally, until they are well browned and cooked through.
  7. Serve hot with chimichurri sauce and fresh bread.
