- Pork shoulder - 300 grams
- Pork fat - 100 grams
- Smoked paprika - 1 tablespoon
- Garlic cloves - 3, minced
- Red wine vinegar - 2 tablespoons
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Natural hog casings - 1 meter
Steps
- In a large bowl, combine the pork shoulder and pork fat, then grind the mixture using a meat grinder fitted with a coarse plate.
- Add the smoked paprika, minced garlic, red wine vinegar, cumin, oregano, salt, black pepper, and cayenne pepper to the ground meat mixture and mix thoroughly until well combined.
- Soak the hog casings in water for about 30 minutes, then rinse them under cold water.
- Stuff the meat mixture into the soaked casings, being careful not to overstuff them, and tie them off into 15-20 cm links.
- Prick the sausages with a needle to release any air pockets.
- Preheat your grill to medium-high heat and cook the sausages for about 15-20 minutes, turning occasionally, until they are well browned and cooked through.
- Serve hot with chimichurri sauce and fresh bread.
