Ingredients

  • Red bell pepper - 1
  • Zucchini - 1 medium
  • Eggplant - 1 small
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1/2 cup, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Red wine vinegar - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Red chili flakes - 1/4 teaspoon

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Cut the red bell pepper, zucchini, and eggplant into thick slices.
  3. In a bowl, combine olive oil, salt, and black pepper. Brush the mixture onto the sliced vegetables.
  4. Grill the vegetables for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
  5. While the vegetables are grilling, prepare the chimichurri sauce by mixing the chopped parsley, cilantro, minced garlic, red wine vinegar, lemon juice, and red chili flakes in a separate bowl.
  6. Once the vegetables are done, remove them from the grill and drizzle the chimichurri sauce generously over the top.
