- Red bell pepper - 1
- Zucchini - 1 medium
- Eggplant - 1 small
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1/2 cup, chopped
- Fresh cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Red wine vinegar - 2 tablespoons
- Lemon juice - 1 tablespoon
- Red chili flakes - 1/4 teaspoon
Steps
- Preheat the grill or a grill pan over medium heat.
- Cut the red bell pepper, zucchini, and eggplant into thick slices.
- In a bowl, combine olive oil, salt, and black pepper. Brush the mixture onto the sliced vegetables.
- Grill the vegetables for about 5-7 minutes on each side, or until they are tender and have nice grill marks.
- While the vegetables are grilling, prepare the chimichurri sauce by mixing the chopped parsley, cilantro, minced garlic, red wine vinegar, lemon juice, and red chili flakes in a separate bowl.
- Once the vegetables are done, remove them from the grill and drizzle the chimichurri sauce generously over the top.
