- Cherry tomatoes - 100g
- Red onion - 1 small (about 50g)
- Cucumber - 1/2 medium (about 100g)
- Fresh cilantro - 1/4 cup, chopped
- Lime juice - 3 tablespoons
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Jalapeño pepper - 1 small, finely chopped (optional)
Steps
- Peel the mango and cut it into small cubes. Place the mango in a mixing bowl.
- Halve the cherry tomatoes and add them to the bowl with the mango.
- Finely chop the red onion and cucumber, then add to the mixing bowl.
- If using, finely chop the jalapeño pepper and add it to the mixture for a spicy kick.
- Add the chopped cilantro, lime juice, olive oil, salt, and black pepper to the bowl.
- Gently toss all the ingredients together until well combined.
- Let the ceviche sit for about 10 minutes to allow the flavors to meld.
