Ingredients

  • Ripe mango - 1 medium (about 300g)
  • Cherry tomatoes - 100g
  • Red onion - 1 small (about 50g)
  • Cucumber - 1/2 medium (about 100g)
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Jalapeño pepper - 1 small, finely chopped (optional)

Steps

  1. Peel the mango and cut it into small cubes. Place the mango in a mixing bowl.
  2. Halve the cherry tomatoes and add them to the bowl with the mango.
  3. Finely chop the red onion and cucumber, then add to the mixing bowl.
  4. If using, finely chop the jalapeño pepper and add it to the mixture for a spicy kick.
  5. Add the chopped cilantro, lime juice, olive oil, salt, and black pepper to the bowl.
  6. Gently toss all the ingredients together until well combined.
  7. Let the ceviche sit for about 10 minutes to allow the flavors to meld.
  8. Serve chilled as an appetizer or light meal.
