  • Green chili - 1, chopped
  • Ground peanuts - 50 grams
  • Dried seaweed (nori) - 2 sheets, crumbled
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

  • Black pepper - to taste

Steps

  1. Heat the palm oil in a medium-sized pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced tomato, bell pepper, and chopped green chili, cooking for about 5 minutes until softened.
  4. Add the sliced okra and cook for another 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and bring to a gentle simmer.
  6. Stir in the ground peanuts and crumbled seaweed, mixing well to combine.
  7. Season with salt and black pepper to taste, and let it simmer for an additional 10 minutes until the okra is tender.
