Ingredients
- Okra - 200 grams, sliced
- Shrimp - 200 grams, peeled and deveined
- Coconut milk - 200 ml
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Palm oil - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Dried shrimp (or fish) - 2 tablespoons, crushed
- Salt - to taste
- Black pepper - to taste
Steps
- Heat palm oil in a large skillet over medium heat.
- Add chopped onion and minced garlic, sauté until the onion is translucent.
- Stir in the sliced okra and cook for about 5 minutes until slightly soft.
- Add the shrimp and cook for another 3-4 minutes until they turn pink.
- Pour in the coconut milk and add the crushed dried shrimp, salt, and black pepper. Stir well.
- Let the mixture simmer for about 10 minutes, allowing the flavors to meld.
- Remove from heat, stir in chopped cilantro, and serve hot.
