Ingredients

  • Carne de Sol (sun-dried beef) - 300 grams
  • Mozzarella cheese - 100 grams
  • Butter - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Bell pepper - 1/2, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. Soak the Carne de Sol in water for about 1 hour to reduce the saltiness, then drain and pat dry.
  2. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat.
  3. Add the chopped onion and minced garlic to the skillet, sautéing until the onion is translucent.
  4. Add the Carne de Sol to the skillet, cooking for about 10-15 minutes until it is browned and heated through.
  5. Stir in the chopped bell pepper and cook for an additional 5 minutes until the pepper is tender.
  6. Reduce heat to low, add the mozzarella cheese on top of the beef mixture, and cover the skillet until the cheese melts.
  7. Once melted, remove from heat and stir in the remaining tablespoon of butter and chopped parsley.
  8. Season with salt and black pepper to taste, and serve hot.
