- Carne de Sol (sun-dried beef) - 200 grams
- Potatoes - 300 grams
- All-purpose flour - 100 grams
- Egg - 1 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Tomato sauce - 200 ml
- Parmesan cheese - 50 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.
- Peel the potatoes and mash them in a large bowl. Add the flour, egg, salt, and mix until a soft dough forms.
- Divide the dough into small pieces and roll each piece into a rope about 2 cm thick. Cut into 2 cm pieces to form the gnocchi.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the carne de sol to the skillet, breaking it apart and cooking until heated through, about 5 minutes.
- Pour in the tomato sauce, and season with salt and black pepper. Let simmer for 5-10 minutes.
- In a baking dish, combine the gnocchi with the carne de sol mixture, mixing gently. Sprinkle grated Parmesan cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.
- Garnish with fresh parsley before serving.
