Ingredients

  • Carne de Sol (sun-dried beef) - 200 grams
  • Potatoes - 300 grams
  • All-purpose flour - 100 grams
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Tomato sauce - 200 ml
  • Parmesan cheese - 50 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Boil the potatoes in salted water until tender, about 20 minutes. Drain and let cool slightly.
  3. Peel the potatoes and mash them in a large bowl. Add the flour, egg, salt, and mix until a soft dough forms.
  4. Divide the dough into small pieces and roll each piece into a rope about 2 cm thick. Cut into 2 cm pieces to form the gnocchi.
  5. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  6. Add the carne de sol to the skillet, breaking it apart and cooking until heated through, about 5 minutes.
  7. Pour in the tomato sauce, and season with salt and black pepper. Let simmer for 5-10 minutes.
  8. In a baking dish, combine the gnocchi with the carne de sol mixture, mixing gently. Sprinkle grated Parmesan cheese on top.
  9. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden.
  10. Garnish with fresh parsley before serving.
