Ingredients

  • Sun-dried beef - 200 grams
  • Pumpkin (cubed) - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Onion (chopped) - 1 medium
  • Fresh parsley (chopped) - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Cheese (grated, optional) - 50 grams

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent.
  3. Add the sun-dried beef to the skillet and cook for about 5 minutes, stirring occasionally.
  4. In a baking dish, combine the cubed pumpkin with the remaining tablespoon of olive oil, black pepper, and salt. Toss well to coat the pumpkin evenly.
  5. Spread the sautéed beef mixture over the pumpkin in the baking dish.
  6. If using, sprinkle the grated cheese on top of the beef and pumpkin mixture.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the pumpkin is tender and the cheese is golden brown.
  9. Once done, remove from the oven, garnish with fresh parsley, and serve hot.
