- Pumpkin (cubed) - 300 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Onion (chopped) - 1 medium
- Fresh parsley (chopped) - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Cheese (grated, optional) - 50 grams
Steps
- Preheat your oven to 200°C (400°F).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they are translucent.
- Add the sun-dried beef to the skillet and cook for about 5 minutes, stirring occasionally.
- In a baking dish, combine the cubed pumpkin with the remaining tablespoon of olive oil, black pepper, and salt. Toss well to coat the pumpkin evenly.
- Spread the sautéed beef mixture over the pumpkin in the baking dish.
- If using, sprinkle the grated cheese on top of the beef and pumpkin mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the pumpkin is tender and the cheese is golden brown.
- Once done, remove from the oven, garnish with fresh parsley, and serve hot.
