- Mashed potatoes - 300 grams (prepared)
- Butter - 30 grams
- Milk - 50 ml
- Mixed vegetables (carrots, bell peppers, and zucchini) - 200 grams
- Fresh parsley - for garnish
Steps
- Start by rubbing the beef with coarse sea salt, ensuring it is well-coated. Let it sit for 24 hours in the refrigerator to cure.
- After curing, rinse the beef under cold water to remove excess salt and pat it dry with a paper towel.
- Heat olive oil in a skillet over medium heat, add minced garlic, and sauté for about 1 minute until fragrant.
- Add the beef to the skillet and sear each side for 5-7 minutes until a nice crust forms. Season with black pepper.
- Reduce the heat to low, cover the skillet, and cook for an additional 15-20 minutes for medium-rare doneness, or until desired doneness is achieved.
- While the beef is cooking, prepare the mashed potatoes by mashing the cooked potatoes with butter and milk until creamy. Season with salt to taste.
- In another pan, sauté the mixed vegetables in a little olive oil until tender, about 5-7 minutes.
- Once the beef is cooked, let it rest for 5 minutes before slicing it thinly against the grain.
- Serve the sliced Carne de Sol on a plate with a generous scoop of mashed potatoes and sautéed vegetables. Garnish with fresh parsley.
