  • Bell pepper - 1 medium, chopped
  • Carrot - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Beef broth - 250 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Cut the beef chuck into bite-sized pieces and season with salt, black pepper, paprika, and cumin.
  4. Increase the heat to high and add the beef to the pot, browning on all sides.
  5. Stir in the chopped bell pepper, sliced carrot, and diced tomato, cooking for another 5 minutes.
  6. Pour in the beef broth and add the bay leaf.
  7. Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours or until the beef is tender.
  8. Remove the bay leaf, adjust seasoning if necessary, and serve garnished with fresh parsley.
