- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste

Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent.
- Cut the beef chuck into bite-sized pieces and season with salt, black pepper, paprika, and cumin.
- Increase the heat to high and add the beef to the pot, browning on all sides.
- Stir in the chopped bell pepper, sliced carrot, and diced tomato, cooking for another 5 minutes.
- Pour in the beef broth and add the bay leaf.
- Bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours or until the beef is tender.
- Remove the bay leaf, adjust seasoning if necessary, and serve garnished with fresh parsley.
