Ingredients

  • Hominy corn - 200 grams
  • Water - 1 liter
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Cinnamon stick - 1
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Peanut butter - 2 tablespoons
  • Toasted coconut flakes - 2 tablespoons
  • Chopped peanuts - 2 tablespoons

Steps

  1. Soak the hominy corn in water overnight.
  2. Drain and rinse the soaked hominy, then place it in a pot with 1 liter of fresh water.
  3. Bring the water to a boil, then reduce to a simmer. Cook the hominy for about 30-40 minutes, or until tender.
  4. Once the hominy is cooked, drain any excess water and return it to the pot.
  5. Add the coconut milk, sugar, cinnamon stick, vanilla extract, and salt to the pot with the hominy.
  6. Stir well and cook over low heat for an additional 10-15 minutes, allowing the flavors to meld.
  7. Stir in the peanut butter until fully incorporated and creamy.
  8. Remove the cinnamon stick and serve hot, topped with toasted coconut flakes and chopped peanuts.
