- Fresh parsley - 2 tablespoons, chopped
- Bay leaf - 1
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 1 liter
- Brown rice - 1/2 cup, rinsed
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced carrot and celery to the pot, cooking for an additional 5 minutes.
- Place the chicken breast into the pot, followed by the bay leaf, salt, and black pepper.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes.
- Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
- Stir in the rinsed brown rice and continue to cook for another 15 minutes, or until the rice is tender.
- Finally, add the chopped fresh parsley, adjust seasoning if necessary, and serve hot.
