Ingredients

  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 1 liter
  • Brown rice - 1/2 cup, rinsed

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add the diced carrot and celery to the pot, cooking for an additional 5 minutes.
  3. Place the chicken breast into the pot, followed by the bay leaf, salt, and black pepper.
  4. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and simmer for 20 minutes.
  5. Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
  6. Stir in the rinsed brown rice and continue to cook for another 15 minutes, or until the rice is tender.
  7. Finally, add the chopped fresh parsley, adjust seasoning if necessary, and serve hot.
