Canelone de Espinafre

Ingredients
- Lasagna sheets - 4 sheets
- Fresh spinach - 200 grams
- Ricotta cheese - 150 grams
- Parmesan cheese - 50 grams, grated
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Tomato sauce - 300 grams
- Nutmeg - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the fresh spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooked spinach, ricotta cheese, half of the grated Parmesan cheese, nutmeg, salt, and black pepper. Mix well until combined.
- Prepare the lasagna sheets by cooking them in boiling water for about 2 minutes, then drain and cool them on a clean kitchen towel.
- Spread a layer of tomato sauce on the bottom of a baking dish.
- Take a lasagna sheet and place a generous spoonful of the spinach and ricotta mixture on one end. Roll it up carefully and place it seam-side down in the baking dish. Repeat with the remaining sheets.
- Once all the canelones are in the dish, pour the remaining tomato sauce over them and sprinkle with the rest of the grated Parmesan cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
- Garnish with fresh basil before serving.
