Ingredients

  • Zucchini - 2 medium
  • Mushrooms (shiitake or cremini) - 200 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 leaves, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Tomato sauce - 200 grams
  • Nutritional yeast - 2 tablespoons (optional for cheesy flavor)
  • Pine nuts - 30 grams, toasted (for topping)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Using a vegetable peeler, slice the zucchini lengthwise into thin strips to create 'noodles'. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and chopped mushrooms to the skillet. Cook for another 5-7 minutes, until the mushrooms are softened and browned.
  5. Stir in the chopped basil, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.
  6. Spread a thin layer of tomato sauce on the bottom of a baking dish.
  7. Take a zucchini strip, place a spoonful of the mushroom mixture at one end, and roll it up. Place the rolled canelone seam-side down in the baking dish. Repeat with the remaining strips and filling.
  8. Once all the canelones are in the dish, cover them with the remaining tomato sauce. Sprinkle with nutritional yeast and toasted pine nuts.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to allow the top to crisp.
  10. Remove from the oven and let it cool for a few minutes before serving.
