Ingredients

  • Fresh white fish (cod or tilapia) - 150 grams
  • Lemon juice - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons
  • Garlic, minced - 1 clove
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cucumber, thinly sliced - 1/2 medium
  • Baguette, sliced into 6 rounds - 1 small baguette
  • Capers - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Place the fresh fish in a baking dish, drizzle with lemon juice, and season with salt and pepper. Bake for 15-20 minutes until the fish is cooked through and flakes easily.
  3. While the fish is baking, slice the baguette into 6 rounds and arrange them on a baking sheet. Brush lightly with olive oil and toast in the oven for about 5-7 minutes until golden and crispy.
  4. Once the fish is cooked, allow it to cool slightly, then flake it into a bowl. Add Dijon mustard, minced garlic, chopped parsley, and remaining olive oil. Mix until well combined.
  5. Spread the fish mixture evenly over each toasted baguette round.
  6. Top each canapé with a slice of cucumber and a couple of capers for garnish.
