- Dijon mustard - 1 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons
- Garlic, minced - 1 clove
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber, thinly sliced - 1/2 medium
- Baguette, sliced into 6 rounds - 1 small baguette
- Capers - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- Place the fresh fish in a baking dish, drizzle with lemon juice, and season with salt and pepper. Bake for 15-20 minutes until the fish is cooked through and flakes easily.
- While the fish is baking, slice the baguette into 6 rounds and arrange them on a baking sheet. Brush lightly with olive oil and toast in the oven for about 5-7 minutes until golden and crispy.
- Once the fish is cooked, allow it to cool slightly, then flake it into a bowl. Add Dijon mustard, minced garlic, chopped parsley, and remaining olive oil. Mix until well combined.
- Spread the fish mixture evenly over each toasted baguette round.
- Top each canapé with a slice of cucumber and a couple of capers for garnish.
