- Shrimp, peeled and deveined - 300 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Onion, chopped - 1 medium
- Tomato, diced - 1 medium
- Bell pepper, diced - 1/2
- Coconut milk - 200 ml
- Cilantro, chopped - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Cut the top off the pumpkin and scoop out the seeds and stringy flesh, creating a hollow cavity.
- Drizzle olive oil inside the pumpkin and season with salt and pepper. Place it on a baking dish and roast in the oven for about 30 minutes, or until tender.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced tomato and bell pepper, cooking for another 5 minutes until softened.
- Stir in the shrimp, cooking for about 3-4 minutes until they turn pink.
- Pour in the coconut milk, adding paprika, lime juice, and cilantro. Simmer for 5-7 minutes, allowing the flavors to meld.
- Once the pumpkin is cooked, carefully fill it with the shrimp mixture.
- Serve the filled pumpkin warm, garnished with additional cilantro if desired.
