Ingredients

  • Medium pumpkin - 1 (about 1 kg)
  • Shrimp, peeled and deveined - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Onion, chopped - 1 medium
  • Tomato, diced - 1 medium
  • Bell pepper, diced - 1/2
  • Coconut milk - 200 ml
  • Cilantro, chopped - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the top off the pumpkin and scoop out the seeds and stringy flesh, creating a hollow cavity.
  3. Drizzle olive oil inside the pumpkin and season with salt and pepper. Place it on a baking dish and roast in the oven for about 30 minutes, or until tender.
  4. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  5. Add the diced tomato and bell pepper, cooking for another 5 minutes until softened.
  6. Stir in the shrimp, cooking for about 3-4 minutes until they turn pink.
  7. Pour in the coconut milk, adding paprika, lime juice, and cilantro. Simmer for 5-7 minutes, allowing the flavors to meld.
  8. Once the pumpkin is cooked, carefully fill it with the shrimp mixture.
  9. Serve the filled pumpkin warm, garnished with additional cilantro if desired.
