Ingredients

  • Shrimp (peeled and deveined) - 200 grams
  • Avocado - 1 medium
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Lime juice - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes (halved) - 100 grams

Steps

  1. In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
  2. Add the shrimp to the skillet, seasoning with salt and black pepper. Cook for 3-4 minutes, turning occasionally, until shrimp are pink and cooked through.
  3. While the shrimp is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, then mix in the lime juice and half of the chopped cilantro.
  4. Once the shrimp is cooked, remove from heat and let it cool slightly.
  5. To serve, place a spoonful of the avocado mixture on a plate, top with the shrimp, and garnish with the remaining cilantro and halved cherry tomatoes.
