- Shrimp (peeled and deveined) - 200 grams
- Avocado - 1 medium
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Lime juice - 2 tablespoons
- Fresh cilantro (chopped) - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes (halved) - 100 grams
Steps
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet, seasoning with salt and black pepper. Cook for 3-4 minutes, turning occasionally, until shrimp are pink and cooked through.
- While the shrimp is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly with a fork, then mix in the lime juice and half of the chopped cilantro.
- Once the shrimp is cooked, remove from heat and let it cool slightly.
- To serve, place a spoonful of the avocado mixture on a plate, top with the shrimp, and garnish with the remaining cilantro and halved cherry tomatoes.
