Ingredients

  • Kale - 150 grams, finely chopped
  • Potatoes - 200 grams, peeled and diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onions are translucent, about 5 minutes.
  2. Add the diced potatoes to the pot and stir well, cooking for another 5 minutes.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  4. Once the potatoes are cooked, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  5. Return the blended soup to the pot, add the finely chopped kale, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes until the kale is wilted.
  6. Stir in the lemon juice before serving, adjusting seasoning if necessary.
