- Kale - 150 grams, finely chopped
- Potatoes - 200 grams, peeled and diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onions are translucent, about 5 minutes.
- Add the diced potatoes to the pot and stir well, cooking for another 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Return the blended soup to the pot, add the finely chopped kale, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes until the kale is wilted.
- Stir in the lemon juice before serving, adjusting seasoning if necessary.
