- Kale - 150 grams, chopped
- Chorizo sausage - 100 grams, sliced
- Cauliflower - 200 grams, chopped into florets
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Olive oil - 1 tablespoon
- Vegetable broth - 500 milliliters
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
- Add the sliced chorizo to the pot and cook for about 5 minutes until lightly browned.
- Stir in the chopped cauliflower and vegetable broth. Bring to a boil and then reduce to a simmer. Cook for about 10 minutes until the cauliflower is tender.
- Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Return the pureed soup to the pot, add the chopped kale, and simmer for an additional 5 minutes until the kale is tender.
- Season the soup with salt, black pepper, and lemon juice to taste. Serve hot.
