Ingredients

  • Kale - 150 grams, chopped
  • Chorizo sausage - 100 grams, sliced
  • Cauliflower - 200 grams, chopped into florets
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Olive oil - 1 tablespoon
  • Vegetable broth - 500 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the sliced chorizo to the pot and cook for about 5 minutes until lightly browned.
  3. Stir in the chopped cauliflower and vegetable broth. Bring to a boil and then reduce to a simmer. Cook for about 10 minutes until the cauliflower is tender.
  4. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
  5. Return the pureed soup to the pot, add the chopped kale, and simmer for an additional 5 minutes until the kale is tender.
  6. Season the soup with salt, black pepper, and lemon juice to taste. Serve hot.
