- Cow's feet - 500 grams
- Water - 1.5 liters
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Bay leaves - 2
- Black peppercorns - 5
- Salt - to taste
- Cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- Clean the cow's feet thoroughly under cold running water, removing any impurities.
- In a large pot, add the cleaned cow's feet and pour in 1.5 liters of water. Bring to a boil over high heat.
- Once boiling, reduce heat to low, skim off any foam that rises to the surface, and add the chopped onion, minced garlic, diced carrot, diced celery, diced tomato, bay leaves, and black peppercorns.
- Cover the pot and let it simmer for about 3 hours, or until the meat is tender and almost falling off the bones.
- Periodically check the water level; you may need to add more water to keep the meat submerged.
- Once the cow's feet are tender, remove them from the pot and let them cool slightly. Once cool enough to handle, remove the meat from the bones and chop it into bite-sized pieces.
- Return the chopped meat to the pot, add salt to taste, and allow the soup to simmer for an additional 15 minutes.
- Serve hot, garnished with chopped cilantro and lime wedges on the side.
