  • Olive oil - 1 tablespoon
  • Chicken broth - 750 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  2. Add the chicken thighs to the pot and brown them on all sides, about 5-7 minutes.
  3. Stir in the diced carrot, potato, and celery, cooking for an additional 3-4 minutes.
  4. Pour in the chicken broth, bringing the mixture to a gentle boil. Reduce heat and let it simmer for 25 minutes.
  5. After 25 minutes, remove the chicken thighs, shred the meat, and return it to the soup.
