  • Cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Fish stock - 500 ml
  • Coconut milk - 200 ml
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes - 1/2 teaspoon (optional)

Steps

  1. Heat the olive oil in a pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the diced tomato and green bell pepper, cooking for an additional 3-4 minutes until the vegetables soften.
  4. Pour in the fish stock and bring to a simmer. Cook for about 5 minutes to allow the flavors to meld.
  5. Add the white fish fillets to the pot, cover, and cook for 8-10 minutes until the fish is cooked through and flakes easily.
  6. Stir in the coconut milk, cilantro, lime juice, and season with salt, black pepper, and chili flakes if desired. Cook for another 2-3 minutes, then remove from heat.
  7. Serve hot, garnished with additional cilantro and lime wedges if desired.
