- Green bell pepper - 1/2, diced
- Cilantro - 1/4 cup, chopped
- Lime juice - 2 tablespoons
- Fish stock - 500 ml
- Coconut milk - 200 ml
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
Steps
- Heat the olive oil in a pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced tomato and green bell pepper, cooking for an additional 3-4 minutes until the vegetables soften.
- Pour in the fish stock and bring to a simmer. Cook for about 5 minutes to allow the flavors to meld.
- Add the white fish fillets to the pot, cover, and cook for 8-10 minutes until the fish is cooked through and flakes easily.
- Stir in the coconut milk, cilantro, lime juice, and season with salt, black pepper, and chili flakes if desired. Cook for another 2-3 minutes, then remove from heat.
- Serve hot, garnished with additional cilantro and lime wedges if desired.
