- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Lemon juice - 1 tablespoon
- Seaweed (nori or dulse) - 2 sheets, crumbled
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced tomato to the pot and cook for another 2-3 minutes until the tomato softens.
- Stir in the green beans, vegetable broth, coconut milk, crumbled seaweed, smoked paprika, cumin, salt, and black pepper. Bring the mixture to a simmer.
- Reduce the heat to low and let it simmer for about 15 minutes, or until the green beans are tender.
- Remove from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
