  • Green beans - 200 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Tomato - 1 medium, diced
  • Lemon juice - 1 tablespoon
  • Seaweed (nori or dulse) - 2 sheets, crumbled
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced tomato to the pot and cook for another 2-3 minutes until the tomato softens.
  3. Stir in the green beans, vegetable broth, coconut milk, crumbled seaweed, smoked paprika, cumin, salt, and black pepper. Bring the mixture to a simmer.
  4. Reduce the heat to low and let it simmer for about 15 minutes, or until the green beans are tender.
  5. Remove from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh cilantro.
