  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the cooked black beans, vegetable broth, cumin, smoked paprika, bay leaf, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.
  5. Remove the bay leaf and use an immersion blender to blend the soup until smooth, or leave it slightly chunky based on your preference.
  6. Taste and adjust the seasoning if necessary.
