  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Tomato - 1 medium, diced
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fish stock - 200 milliliters
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large baking dish, layer the sliced zucchini and bell pepper at the bottom.
  3. In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  4. Add the diced tomato, paprika, cumin, salt, and black pepper to the skillet, stirring well to combine and cooking for 2-3 minutes.
  5. Pour the fish stock and lemon juice into the skillet, bringing it to a simmer for about 5 minutes.
  6. Place the fish fillets on top of the vegetable layer in the baking dish, then pour the simmering sauce over the fish and vegetables.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes to allow the fish to brown slightly.
  9. Garnish with fresh parsley before serving.
