Steps
- Preheat the oven to 180°C (350°F).
- In a large baking dish, layer the sliced zucchini and bell pepper at the bottom.
- In a skillet, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the diced tomato, paprika, cumin, salt, and black pepper to the skillet, stirring well to combine and cooking for 2-3 minutes.
- Pour the fish stock and lemon juice into the skillet, bringing it to a simmer for about 5 minutes.
- Place the fish fillets on top of the vegetable layer in the baking dish, then pour the simmering sauce over the fish and vegetables.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to allow the fish to brown slightly.
- Garnish with fresh parsley before serving.
