Ingredients

  • Water - 250 ml
  • Milk - 100 ml
  • Vegetable oil - 60 ml
  • Tapioca flour - 200 g
  • Grated Parmesan cheese - 100 g
  • Salt - 1 tsp
  • Egg - 1 large
  • Ground coffee - 30 g
  • Sugar - 1 tsp (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a saucepan, combine water, milk, and vegetable oil. Heat over medium until it starts to boil.
  3. In a mixing bowl, combine tapioca flour and salt. Pour the hot liquid mixture over the flour and mix well until smooth.
  4. Allow the mixture to cool for a few minutes, then add the egg and grated Parmesan cheese. Mix until well incorporated.
  5. Grease a mini muffin tin or use silicone molds. Spoon the mixture into the molds, filling each about 3/4 full.
  6. Bake in the preheated oven for 15-20 minutes or until the tops are golden and a toothpick comes out clean.
  7. While the pão de queijo is baking, brew the coffee using your preferred method. Add sugar if desired.
  8. Serve the warm pão de queijo with the freshly brewed coffee.
