Ingredients
- Duck breast - 300 grams
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Whole wheat burger buns - 2
- Avocado - 1, sliced
- Tomato - 1, sliced
- Lettuce leaves - 2
Steps
- Preheat a skillet over medium heat.
- Score the skin of the duck breasts in a crosshatch pattern and season with salt, black pepper, cumin, and paprika.
- Place the duck breasts skin-side down in the skillet and cook for about 6-8 minutes until the skin is crispy and golden.
- Flip the duck breasts and cook for another 4-6 minutes, or until they reach an internal temperature of 60°C (140°F) for medium-rare.
- Remove the duck from the skillet and let it rest for 5 minutes before slicing it thinly.
- In the same skillet, add olive oil and sauté the garlic and onion until translucent.
- In a mixing bowl, combine the sliced duck, sautéed garlic and onion, and chopped parsley, mixing well.
- Toast the whole wheat burger buns in the skillet for 1-2 minutes until golden.
- Assemble the burgers by placing lettuce on the bottom bun, followed by the duck mixture, tomato slices, and avocado.
- Top with the other half of the bun and serve immediately.
