- Parsley - 2 tablespoons, finely chopped
- Lemon zest - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for frying
- Lettuce leaves - 4 large, for serving
- Avocado - 1, sliced, for topping
Steps
- In a food processor, combine the shrimp, chopped fish, garlic, chives, parsley, lemon zest, salt, and black pepper. Pulse until the mixture is well combined but still has some texture.
- Transfer the mixture to a bowl and add the egg and almond flour. Mix until thoroughly combined.
- Form the mixture into two burger patties, approximately 1.5 cm thick.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the patties from the skillet and let them rest for a minute.
- To serve, place each patty on a large lettuce leaf and top with avocado slices. Optionally, add any additional toppings of your choice.
