  • Almond flour - 3 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Lettuce leaves - 4 large (for wrapping)
  • Tomato - 1 medium, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a food processor, combine the shrimp, garlic, cilantro, lime juice, egg, almond flour, paprika, cumin, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.
  2. Shape the shrimp mixture into two burger patties.
  3. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they are golden brown and cooked through.
  4. Once cooked, remove the patties from the skillet and let them rest for a minute.
  5. To assemble, place each shrimp patty on a large lettuce leaf, and top with slices of tomato and avocado. Wrap the lettuce around the filling and enjoy!
