- Beetroot - 200 grams, cooked and mashed
- Chickpeas - 100 grams, canned and drained
- Breadcrumbs - 50 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Tahini - 2 tablespoons (optional)
Steps
- In a mixing bowl, combine the mashed beetroot, drained chickpeas, breadcrumbs, chopped onion, minced garlic, cumin powder, coriander powder, salt, and black pepper. Mix well until a uniform mixture forms.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Once hot, add the beetroot patties and cook for about 4-5 minutes on each side until golden brown and crispy.
- While the patties are cooking, prepare the burger buns by toasting them lightly in a separate pan or oven if desired.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a beetroot patty, a slice of tomato, and avocado. Drizzle tahini on top if using, and close with the top half of the bun.
- Serve immediately with your favorite condiments or sides.
