  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Slice the eggplant into rounds, sprinkle with salt, and let it sit for 10 minutes to draw out moisture.
  3. Pat the eggplant slices dry with paper towels, then bake them in the preheated oven for 15 minutes until slightly soft.
