Ingredients

  • Black-eyed peas - 200 grams
  • Shrimp - 150 grams, peeled and deveined
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 2 tablespoons, chopped
  • Coconut flour - 2 tablespoons
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cabbage - 100 grams, shredded
  • Tomato - 1 medium, diced
  • Avocado - 1 small, sliced
  • Lime - 1, juiced

Steps

  1. Soak the black-eyed peas in water overnight, then drain and rinse.
  2. In a food processor, blend the soaked black-eyed peas until smooth, then transfer to a mixing bowl.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  4. Add the sautéed onion and garlic to the black-eyed pea mixture, followed by the shrimp, cilantro, coconut flour, egg, salt, and black pepper. Mix until well combined.
  5. Form the mixture into two patties.
  6. In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. In a bowl, combine the shredded cabbage, diced tomato, and lime juice. Season with salt and pepper to taste.
  8. Serve the patties on a plate, topped with the fresh cabbage salad and slices of avocado.
