Ingredients
- Zucchini - 300 grams, grated
- Chickpea flour - 50 grams
- Oats - 30 grams, ground
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- Grate the zucchini and place it in a bowl. Sprinkle with a little salt and let it sit for 10 minutes to release excess water.
- After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.
- In a mixing bowl, combine the squeezed zucchini, chickpea flour, ground oats, minced garlic, chopped onion, parsley, cumin, salt, and black pepper. Mix well until a dough forms.
- Divide the mixture into two equal portions and shape them into burger patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
- While the patties cook, prepare the burger buns by toasting them lightly if desired.
- Assemble the burgers by placing a patty on each bun, topping with lettuce, tomato slices, and avocado. Serve immediately.
