Ingredients

  • Zucchini - 300 grams, grated
  • Chickpea flour - 50 grams
  • Oats - 30 grams, ground
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. Grate the zucchini and place it in a bowl. Sprinkle with a little salt and let it sit for 10 minutes to release excess water.
  2. After 10 minutes, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.
  3. In a mixing bowl, combine the squeezed zucchini, chickpea flour, ground oats, minced garlic, chopped onion, parsley, cumin, salt, and black pepper. Mix well until a dough forms.
  4. Divide the mixture into two equal portions and shape them into burger patties.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown.
  6. While the patties cook, prepare the burger buns by toasting them lightly if desired.
  7. Assemble the burgers by placing a patty on each bun, topping with lettuce, tomato slices, and avocado. Serve immediately.
