- Almond flour - 50 grams
- Egg - 1 large
- Parmesan cheese (grated) - 30 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley (chopped) - 2 tablespoons
- Avocado (sliced) - 1 small
- Lettuce leaves - 4 pieces
- Tomato (sliced) - 1 medium
Steps
- Preheat the oven to 200°C (400°F).
- Place the cubed pumpkin on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender.
- In a mixing bowl, mash the roasted pumpkin with a fork until smooth.
- Add almond flour, egg, Parmesan cheese, garlic powder, onion powder, cumin, and chopped parsley to the mashed pumpkin. Mix until well combined.
- Form the mixture into two patties of equal size.
- Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
- Assemble the burgers by placing each patty on a lettuce leaf, topping with sliced avocado and tomato.
