  • Almond flour - 50 grams
  • Egg - 1 large
  • Parmesan cheese (grated) - 30 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Avocado (sliced) - 1 small
  • Lettuce leaves - 4 pieces
  • Tomato (sliced) - 1 medium

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the cubed pumpkin on a baking tray, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes or until tender.
  3. In a mixing bowl, mash the roasted pumpkin with a fork until smooth.
  4. Add almond flour, egg, Parmesan cheese, garlic powder, onion powder, cumin, and chopped parsley to the mashed pumpkin. Mix until well combined.
  5. Form the mixture into two patties of equal size.
  6. Heat a non-stick skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and cooked through.
  7. Assemble the burgers by placing each patty on a lettuce leaf, topping with sliced avocado and tomato.
