Ingredients

  • Coconut milk - 200 ml
  • Cocoa powder - 30 g
  • Maple syrup - 50 g
  • Coconut oil - 15 g
  • Vanilla extract - 1 tsp
  • Salt - a pinch
  • Grated coconut - for rolling (optional) - 30 g

Steps

  1. In a medium saucepan, combine the coconut milk, cocoa powder, maple syrup, coconut oil, vanilla extract, and a pinch of salt.
  2. Cook over medium heat, stirring constantly until the mixture thickens and starts to pull away from the sides of the pan, about 10-15 minutes.
  3. Remove from heat and let the mixture cool slightly until it is manageable to handle.
  4. Once cooled, grease your hands with a little coconut oil and scoop out small portions of the mixture to roll into balls.
  5. Roll the brigadeiros in grated coconut (if using) to coat them evenly.
  6. Place the brigadeiros on a plate and refrigerate for at least 30 minutes before serving.
