Ingredients
- Coconut flour - 2 tablespoons
- Unsweetened cocoa powder - 3 tablespoons
- Erythritol - 2 tablespoons
- Coconut cream - 100 ml
- Butter - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Pinch of salt
- Unsweetened shredded coconut - 2 tablespoons (for rolling)
Steps
- In a non-stick saucepan, melt the butter over medium heat.
- Add the coconut cream, erythritol, cocoa powder, coconut flour, vanilla extract, and a pinch of salt into the saucepan.
- Stir the mixture constantly until it thickens and pulls away from the sides of the pan, about 8-10 minutes.
- Remove the saucepan from the heat and let the mixture cool for about 5 minutes.
- Once cooled, use your hands to shape the mixture into small balls, about 1 inch in diameter.
- Roll each ball in the unsweetened shredded coconut to coat them evenly.
- Place the Brigadeiro Keto balls on a plate and refrigerate for at least 10 minutes before serving.
