Ingredients

  • Coconut flour - 2 tablespoons
  • Unsweetened cocoa powder - 3 tablespoons
  • Erythritol - 2 tablespoons
  • Coconut cream - 100 ml
  • Butter - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Pinch of salt
  • Unsweetened shredded coconut - 2 tablespoons (for rolling)

Steps

  1. In a non-stick saucepan, melt the butter over medium heat.
  2. Add the coconut cream, erythritol, cocoa powder, coconut flour, vanilla extract, and a pinch of salt into the saucepan.
  3. Stir the mixture constantly until it thickens and pulls away from the sides of the pan, about 8-10 minutes.
  4. Remove the saucepan from the heat and let the mixture cool for about 5 minutes.
  5. Once cooled, use your hands to shape the mixture into small balls, about 1 inch in diameter.
  6. Roll each ball in the unsweetened shredded coconut to coat them evenly.
  7. Place the Brigadeiro Keto balls on a plate and refrigerate for at least 10 minutes before serving.
