  • Shredded unsweetened coconut (for rolling) - 2 tablespoons

Steps

  1. In a medium saucepan, combine the cocoa powder, almond flour, erythritol, coconut oil, almond milk, vanilla extract, and a pinch of salt.
  2. Cook the mixture over medium heat, stirring constantly until it thickens and starts to pull away from the sides of the pan, about 5-7 minutes.
  3. Remove from heat and let it cool for a few minutes until it is manageable to handle.
  4. Once cooled, use your hands to form small balls (about 1 inch in diameter) from the mixture.
  5. Roll each ball in shredded unsweetened coconut until fully coated.
