Ingredients

  • Erythritol - 50 grams
  • Vanilla extract - 1 teaspoon
  • Cocoa powder (for rolling) - 20 grams
  • A pinch of salt

Steps

  1. In a medium saucepan, combine the coconut cream, erythritol, vanilla extract, and a pinch of salt over medium heat.
  2. Stir the mixture continuously until it thickens, about 5-7 minutes.
  3. Once thickened, remove from heat and let it cool slightly.
  4. Add the unsweetened shredded coconut to the mixture and stir until fully combined.
  5. Allow the mixture to cool for about 10 minutes until it’s manageable to handle.
  6. Grease your hands slightly with coconut oil and roll the mixture into small balls, about 2-3 cm in diameter.
  7. Roll each ball in cocoa powder to coat evenly.
  8. Place the brigadeiros on a plate and refrigerate for at least 30 minutes before serving.
