Steps
- In a medium saucepan, combine the coconut cream, erythritol, vanilla extract, and a pinch of salt over medium heat.
- Stir the mixture continuously until it thickens, about 5-7 minutes.
- Once thickened, remove from heat and let it cool slightly.
- Add the unsweetened shredded coconut to the mixture and stir until fully combined.
- Allow the mixture to cool for about 10 minutes until it’s manageable to handle.
- Grease your hands slightly with coconut oil and roll the mixture into small balls, about 2-3 cm in diameter.
- Roll each ball in cocoa powder to coat evenly.
- Place the brigadeiros on a plate and refrigerate for at least 30 minutes before serving.
