  • Carrot - 1 medium, grated
  • Bell pepper - 1/2, finely chopped
  • Feta cheese - 100g, crumbled
  • Parmesan cheese - 30g, grated
  • Black pepper - 1/4 tsp
  • Nutmeg - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a bowl, combine flour, baking powder, and salt; mix well.
  3. In another bowl, whisk together the eggs, milk, and olive oil until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until there are no lumps.
  5. Fold in the chopped spinach, grated carrot, bell pepper, feta cheese, Parmesan cheese, black pepper, and nutmeg until evenly distributed.
  6. Pour the batter into the prepared baking tray, spreading it evenly.
