- Spinach - 50g, finely chopped
- Carrot - 1 medium, grated
- Bell pepper - 1/2, finely chopped
- Feta cheese - 100g, crumbled
- Parmesan cheese - 30g, grated
- Black pepper - 1/4 tsp
- Nutmeg - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a bowl, combine flour, baking powder, and salt; mix well.
- In another bowl, whisk together the eggs, milk, and olive oil until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until there are no lumps.
- Fold in the chopped spinach, grated carrot, bell pepper, feta cheese, Parmesan cheese, black pepper, and nutmeg until evenly distributed.
- Pour the batter into the prepared baking tray, spreading it evenly.
- Bake in the preheated oven for about 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
- Remove from the oven and let it cool for 5 minutes. Then, carefully roll the cake using the parchment paper to help shape it.
