Ingredients
- All-purpose flour - 100g
- Sugar - 100g
- Almond milk - 120ml
- Vegetable oil - 30ml
- Baking powder - 1 tsp
- Guava paste - 100g
- Lemon juice - 1 tbsp
- Vanilla extract - 1 tsp
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and line a baking tray (approximately 30x40 cm) with parchment paper.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well.
- In another bowl, whisk together the almond milk, vegetable oil, lemon juice, and vanilla extract.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined and smooth.
- Pour the batter into the prepared baking tray and spread evenly with a spatula.
- Bake in the preheated oven for about 20 minutes or until a toothpick inserted in the center comes out clean.
- While the cake is baking, soften the guava paste in a small saucepan over low heat until it becomes spreadable.
- Once the cake is done, remove it from the oven and let it cool for about 5 minutes, then carefully invert it onto a clean kitchen towel dusted with a little sugar.
- Spread the softened guava paste evenly over the warm cake, leaving a small margin at the edges.
- Using the towel, carefully roll the cake tightly from one end to the other, creating a spiral. Let it cool completely in the roll.
- Once cooled, slice into pieces and serve.
