  • Fermented cassava (puba) - 200 grams
  • Coconut milk - 150 ml
  • Sugar - 100 grams
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Salt - a pinch
  • Grated coconut - 50 grams
  • Butter (melted) - 30 grams

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine the fermented cassava, sugar, and melted butter, stirring until well mixed.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Pour in the coconut milk and mix until fully incorporated.
  5. Sprinkle in the baking powder and salt, then fold in the grated coconut gently.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool for 10 minutes before slicing and serving.
