Ingredients

  • Gluten-free all-purpose flour - 80 grams
  • Cocoa powder - 15 grams
  • Baking powder - 5 grams
  • Sugar - 100 grams
  • Eggs - 1 large
  • Milk - 60 ml
  • Vegetable oil - 30 ml
  • Vanilla extract - 5 ml
  • Dark chocolate - 50 grams
  • Heavy cream - 100 ml
  • Powdered sugar - 20 grams
  • Whipped cream - for topping

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the gluten-free all-purpose flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, whisk the egg, milk, vegetable oil, and vanilla extract until combined.
  4. Combine the wet ingredients with the dry ingredients and mix until smooth.
  5. Pour the batter into a greased baking dish and bake for 25 minutes or until a toothpick comes out clean.
  6. While the cake is baking, prepare the chocolate ganache by melting dark chocolate in a heatproof bowl over simmering water.
  7. Once melted, stir in the heavy cream until smooth and set aside to cool.
  8. After the cake has cooled, cut it into small cubes.
  9. In a jar, layer the cake cubes, chocolate ganache, and whipped cream alternately until the jar is filled.
  10. Top with additional whipped cream and a sprinkle of cocoa powder, if desired.
