Ingredients

  • Cornmeal - 100g
  • Fresh corn kernels - 150g
  • Milk - 100ml
  • Eggs - 2
  • Sugar - 50g
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Vegetable oil - 50ml
  • Cheese (optional, for topping) - 50g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a blender, combine the fresh corn kernels, milk, eggs, and vegetable oil. Blend until smooth.
  3. In a large mixing bowl, combine the cornmeal, sugar, baking powder, and salt.
  4. Pour the blended mixture into the bowl with the dry ingredients and stir until just combined.
  5. Grease a 20cm round cake pan and pour the batter into it.
  6. If desired, sprinkle cheese on top of the batter.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool for a few minutes before slicing and serving.
