- Cornmeal - 100g
- Fresh corn kernels - 150g
- Milk - 100ml
- Eggs - 2
- Sugar - 50g
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Vegetable oil - 50ml
- Cheese (optional, for topping) - 50g
Steps
- Preheat the oven to 180°C (350°F).
- In a blender, combine the fresh corn kernels, milk, eggs, and vegetable oil. Blend until smooth.
- In a large mixing bowl, combine the cornmeal, sugar, baking powder, and salt.
- Pour the blended mixture into the bowl with the dry ingredients and stir until just combined.
- Grease a 20cm round cake pan and pour the batter into it.
- If desired, sprinkle cheese on top of the batter.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for a few minutes before slicing and serving.
