  • Passion fruit pulp - 100 grams
  • Whey protein powder (vanilla flavor) - 30 grams
  • Almond flour - 50 grams
  • Coconut sugar - 40 grams
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Greek yogurt - 100 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan.
  2. In a mixing bowl, combine the eggs, Greek yogurt, passion fruit pulp, and vanilla extract. Whisk until smooth.
  3. In another bowl, mix the almond flour, whey protein powder, coconut sugar, baking powder, and salt.
  4. Gradually combine the dry ingredients with the wet mixture, stirring until well incorporated.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for a few minutes before transferring it to a wire rack to cool completely.
  8. Slice and serve, optionally drizzling with additional passion fruit pulp for garnish.
