- Coconut sugar - 40 grams
- Eggs - 2 large
- Baking powder - 1 teaspoon
- Greek yogurt - 100 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F) and grease a small cake pan.
- In a mixing bowl, combine the eggs, Greek yogurt, passion fruit pulp, and vanilla extract. Whisk until smooth.
- In another bowl, mix the almond flour, whey protein powder, coconut sugar, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture, stirring until well incorporated.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
