  • Coconut sugar - 80 grams
  • Greek yogurt - 100 grams
  • Egg - 1 large
  • Fresh lemon juice - 30 ml
  • Lemon zest - 1 teaspoon
  • Olive oil - 30 ml
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan.
  2. In a mixing bowl, combine whole wheat flour, almond flour, baking powder, coconut sugar, and salt.
  3. In another bowl, whisk together the Greek yogurt, egg, lemon juice, lemon zest, olive oil, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
