  • Almond milk - 100 milliliters
  • Fresh orange juice - 60 milliliters
  • Zest of 1 orange - 1 tablespoon
  • Coconut oil - 30 grams (melted)
  • Brown sugar - 70 grams
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Pinch of salt - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small cake pan.
  2. In a mixing bowl, combine the flour, baking powder, and salt.
  3. In another bowl, whisk together the brown sugar, melted coconut oil, almond milk, orange juice, orange zest, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
