Ingredients

  • Dark chocolate (70% cocoa) - 100g
  • Unsalted butter - 50g
  • Brown sugar - 100g
  • Eggs - 2 large
  • Cocoa powder - 30g
  • Almond flour - 100g
  • Baking powder - 1 tsp
  • Vanilla extract - 1 tsp
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small round cake pan (20cm).
  2. In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the brown sugar and eggs until well combined and slightly frothy.
  4. Add the melted chocolate mixture and vanilla extract to the egg mixture, stirring until fully incorporated.
  5. In a separate bowl, combine the almond flour, cocoa powder, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve warm or at room temperature, optionally dusted with powdered sugar or topped with whipped cream.
