Ingredients

  • Carrots - 200 grams, grated
  • All-purpose flour - 100 grams
  • Sugar - 100 grams
  • Vegetable oil - 80 ml
  • Eggs - 2 large
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Unsweetened cocoa powder - 30 grams
  • Milk - 50 ml

Steps

  1. Preheat the oven to 180°C (350°F) and grease a 20 cm round cake pan.
  2. In a blender, combine grated carrots, sugar, eggs, and vegetable oil. Blend until smooth.
  3. In a mixing bowl, combine flour, baking powder, and vanilla extract. Gradually add the blended carrot mixture and mix until well combined.
  4. Pour the batter into the prepared cake pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  5. While the cake is baking, prepare the chocolate glaze by mixing cocoa powder, sugar, and milk in a saucepan over low heat until smooth and glossy.
  6. Once the cake has cooled slightly, pour the chocolate glaze over the top and let it set before slicing.
